Fajitas anyone?

Davette’s Fajitas

I don’t really like Fajitas. They give me horrible heartburn and gas to be truthful. I also don’t really like peppers either. Sure I will eat them, if someone makes me fajitas, the traditional kind, I will gobble them right up. One because I am a nice person and my mother taught me to eat anything that someone makes for you and like it, and second cause its food. But if someone told me I would have to eat them the rest of my life I would probably just not eat, cause I don’t want to deal with the fire that will explode in my mid-section.
So today’s recipe was inspired by me wanting to love fajitas and to find something that I could eat that would take the place of them without giving met the gas and fire that follows when I eat them.
I went to my favorite foodie site www.skinytaste.com and found this recipe.
Quick Skillet Steak with Onions and Mushrooms

Gina's Weight Watcher Recipes
Servings: 4 • Serving Size: 1/4th (about 4 oz) • Old Points: 2 pts • Points+: 2 pts
Calories: 95.4 • Fat: 4.1 g • Protein: 12.5 g • Carb: 3.5 g • Fiber: 1.0 g • Sugar: 1.1 g Sodium: 26.8 mg (without salt)

Ingredients:
·        1/2 lb thin cut beef round sandwich steaks
·        1/2 large onion, sliced into rings
·        1/2 tsp olive oil
·        8 oz sliced mushrooms
·        4 seconds cooking spray (I like Pam Olive Oil)
·        garlic powder to taste
·        salt and fresh cracked pepper to taste
So what I did was prepare it just like the directions I am going to post below.
Slice beef into thin strips. Season with salt, garlic powder and fresh pepper to taste. Heat a large skillet over high heat. When the skillet is very hot, spray with cooking spray and add half of the beef. Cook one minute, then turn steak and cook an additional 30 seconds. Set aside in a large dish
Spray the skillet again and when it gets hot add the remaining steak, cooking one minute, then turning and cooking 30 seconds more. Add remaining steak to the dish. Return skillet to heat and spray once again with cooking spray; add onions and season with salt and pepper. Cook one minute, then turn and cook onions an additional 30 seconds or until onions are golden
Lower heat to medium and add 1/2 tsp olive oil to the skillet, add mushrooms, salt and pepper and lightly spray the top of the mushrooms with cooking spray. Cook 1 1/2 minutes, then turn mushrooms and cook another minute and a half. Add to dish with steak and onions and stir to combine.
Now, skinnytaste said that you can serve this over rice, which I mean would be great especially if you had some green veggies to go with it like a broccoli or some spinach, but I really had a taste for a tortilla, so what I did is just that.  I took a whole wheat tortilla and stuff the mixture into it. I added some sour cream, fat free Monterey jack cheese and some salsa and rolled it up. INSTANT FAJITAS.
Additional Ingredients:
1 serving of the Chi-Chi’s individual salsa cups
2 tbs of fat free sour cream
2 pinches of shredded cheese, I used Colby Jack.
And volia

Sorry its not all put together, but my greedy ass ate the other ones I made before taking a picture of them. I promise to get better with the pictures as I go.
So for you weight watcher’s fans out there this whole meal was 9.5 points. And It was filling. I had two, but then I felt like I was stuffed myself so one will do the trick. Matter of fact I had one for lunch and it was all I ate plus some fruit.
Pretty cool huh. Let me know by leaving a comment if you try it J
